This year who needs the corn beef and cabbage, or the beer calories to celebrate St. Patrick’s Day. Last year we recommended the traditional St Patty day feasts, but this year we are saving calories and keeping it simple.
To make sure you don’t get pinched this holiday, the chefs at Vintage Grocers came up with a fun recipe using items sold at the market. Their Green Machine Pizza is made up of some of our favorite greens like pesto, spinach and broccoli – so it’s healthy AND delicious!
Green Machine Pizza
Ingredients:
1 Vintage Grocers Take and Bake Pizza Dough (Looking for a gluten free option? Substitute Gluten Free Pizza Dough in the freezer section by CA FOOD COMPANY)
1 Container Buitoni Pesto Sauce
1 Container Organic Girl Baby Spinach
1 Head Fresh Broccoli Florets
2 Vintage Grocers Take and Bake Mozzarella
Directions
Roll dough into a 16-in. x 12-in. rectangle. Transfer to a baking sheet coated with cooking spray; build up edges slightly
Prick dough with a fork. Bake at 375° for 8-10 minutes or until lightly browned
At the same time, place broccoli florets on another sheet pan and cook for 12 minutes
Meanwhile, in a large saucepan, bring 1/2 in. of water to a boil. Add spinach; cover and boil for 3-5 minutes or until wilted. Drain and place in a food processor.
Add pesto; cover and process until blended
Spread over pizza crust. Top with mozzarella cheese
Add partially cooked broccoli
Bake 10-12 minutes or until cheese is melted
