Our Zoom Call With Chef Lamar Moore

Last week via zoom we were honored to watch the talented and amazing Chef Lamar Moore create his signature dish, which is a NY Steak infused with Red Wine Butter, and Yukon Potato Gratin with Shishito Peppers. Lamar is partnered with LA Food Bowl this year for their upcoming Takeout and give back Cook-A-Thon benefitting World Central Kitchen.

Moore has appeared on popular culinary competition shows like Bravo TV’s “Welcome To Waverly” and Food Network’s “Chopped.” Most recently, Moore competed on Food Network’s “Vegas Chef Prizefight,” where he earned and won his current position as head chef of the all-new $10 million steakhouse, Bugsy & Meyer’s Steakhouse at Flamingo Las Vegas.

Moore created a phenomenal main dish pairing his steak with savory red wine butter. His wine pairing for the dish was a Peter Michael Les Pavots. This straight-up phenomenal Cabernet offers a powerful note of ripe black fruits, tobacco leaf, chocolate, and spring flowers. It has a Margaux-like complexity and elegance. Full-bodied on the palate, it has a multi-dimensional, seamless texture, building tannins, and a great finish. The steak was seasoned with kosher salt, black pepper on both sides cooked medium rare on a cast iron pan.

The flavorful Yukon Potato Gratin was the perfect side dish. Layered with green onion on top, the potatoes are turned into the vessel for cream, gruyere cheese, and sharp cheddar blends giving it a nice creamy texture and a slight kick for flavor.

This food and fundraising special is a two-hour event hosted by The Times Food team and will feature guest hosts Ludo Lefebvre and Evan Kleiman, a cooking demonstration from José Andrés, and special appearances from Danny Trejo, Jack Black, Jamie Lee Curtis, Phil Rosenthal, and Eric Wareheim.

Takeout and Give Back, a new campaign to encourage support for restaurants in Southern California and raise awareness for local and global food relief efforts. Due to public health guidance related to the coronavirus pandemic, the fourth annual Food Bowl festival, originally scheduled for the month of May, will shift from its traditional in-person format to a series of online events through the Takeout and Give Back campaign.

Continuing Food Bowl’s mission to highlight issues of food access, sustainability, and waste reduction, the Takeout and Give Back campaign will launch virtual charity collaborations in support of World Central Kitchen and the Los Angeles Regional Food Bank to raise awareness and funds for communities impacted by the coronavirus pandemic and resulting economic crisis.
